The best ramen in Melbourne right now

A good bowl of ramen is broth plus timing, and Melbourne does both, from tonkotsu specialists to izakaya kitchens that ladle out something richer late at night. We ranked the inner-city ramen by Curateria Score and what diners keep saying in their most recent reviews, chains and far suburbs left out. The order leans hard on the CBD, where most of the city's ramen lives. Here is where the evidence lands.

Top of the list is Tokyo Maki - Melbourne in the city, a busy Japanese-Korean kitchen reviewers rate for fast service and a tonkotsu chashu ramen that holds its own on a menu better known for its cheese dakgalbi. OMI Melbourne Central at Melbourne Central follows on a spicy tonkotsu ramen and a chicken katsu curry, a convenient, well-priced room diners keep returning to.

Snow Monkey Ramen in South Yarra is the destination for a creamy lobster ramen, with reviewers praising a thick broth and al dente noodles enough to drive across town. Musashi Izakaya in the city is the izakaya pick, a high-volume room whose wagyu ramen sits alongside sukiyaki and sashimi platters. Hakata Gensuke Tonkotsu Ramen carries the most reviews on this list by far, more than three thousand, on a black garlic tonkotsu and a signature tonkotsu reviewers call authentic and tasty.

Mr Ramen San in Chinatown turns out a spicy tonkotsu and a chashu ramen with quick service and what one reviewer flatly calls S-tier. Shop Ramen in Fitzroy wins people over with a tan tan beef brisket ramen, more than one diner naming it among the best they have had. Sara Craft Ramen & Bar in the city is the craft option, a smaller room reviewers love for an asari clam shoyu ramen and the karaage.

The list closes across the inner north. Infinite Wasabi in Southbank is the hidden-gem pick, a premium-feeling little room on a pork ramen reviewers happily return for. No 18 Ramen St Kilda in St Kilda runs a Black Magic ramen on burnt black garlic oil in a cosy room regulars are glad is still there, GOGYO Fitzroy in Fitzroy draws a "best ramen of my life" on its kogashi miso, and Tamura Sake Bar in Fitzroy rounds it out as a sake bar whose fish-broth signature ramen and katsu sando back a serious sake list.

How we ranked it

Every kitchen here carries a Curateria Score built from its full review history, then re-weighted toward the most recent hundred reviews so the order reflects the kitchen as it cooks today, not as it cooked two years ago. We hold the cohort to a tight inner-Melbourne radius, roughly 15km of the city, and drop multi-location chains, so what is left reads as the genuine local order. We blend that quality score with how often and how recently diners are still talking about the place. The corpus is Victorian and scored; no AI writer ever reads it. The ranking is arithmetic; the words are ours.
